3 Easy Brunches for 12 to 16 People on Vacation

Brunch is one of the easiest meals to make feel generous for a big vacation group without turning one person into a short-order cook.

For 12 to 16 people, the trick is to choose food that can be assembled in batches, baked mostly hands-off, and set out buffet-style. These are three combinations we would actually use.

1. Quiche + fruit + roasted potatoes

Two or three large quiches can do a surprising amount of work. Make one classic option, one vegetable-heavy option, and one that skips meat entirely. Add a big bowl of fruit and sheet pans of breakfast potatoes and you have a complete brunch without cooking individual eggs to order.

2. Overnight French toast + scrambled eggs + yogurt bar

Assemble the French toast the night before and refrigerate it. In the morning, bake it while someone else handles a large batch of scrambled eggs. Set out yogurt, granola, berries, bananas, and nuts so people can build their own side.

The advantage is timing: most of the work happens before everyone wakes up.

3. Breakfast taco bar

Scrambled eggs, breakfast potatoes, beans, tortillas, salsa, avocado, cheese, and one or two proteins scale beautifully. It also handles dietary preferences better than a single casserole because guests can build their own plate.

If your rental has a rice cooker, use it. Rice or seasoned breakfast potatoes made in bulk free up burners for eggs and fillings.

How to make brunch easier for the organizer

Do as much chopping and assembly as possible the night before. Put serving bowls and utensils out before bed. Label vegetarian or allergy-friendly dishes. And build one buffet instead of plating anything individually.
